Sauce Picante
- 1 cup cooking oil
- 1 large serving spoon of all purpose flower
- 2 onions chopped
- 1/2 lemon chopped(pulp and zest only)
- 1 bell pepper, chopped
- 2 stalks celery chopped
- 1 medium can whole tomatoes
- 1 small can tomatoes with chilies mashed
- 1 small can tomato paste
- green onion tops chopped fine
- 2 teaspoons of Worcestershire sauce
- One of following or a mix of whatever you'd like(as much as you want in your sauce):
- shrimp and/or crab
- browned and cut up chicken breast
- browned and cut up rabbit, squirrel or deer.(or possum, raccoon, etc. kidding!)
- any other ingredient. Large mushrooms are great!

Cornbread
This is a basic Southern-style unsweetened cornbread, and it's delicious with beans, greens, or chili. If you like a sweet cornbread, feel free to add 3 to 4 tablespoons of sugar.
Ingredients:
- 1 1/2 cups stone ground cornmeal
- 1 cup all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 1/3 cup canola oil
- 1 large egg
grease a 9-inch square baking pan. Heat oven to 350°.
combine the cornmeal, flour, baking powder, baking soda and salt. In another bowl or large cup, whisk together the buttermilk, oil, and egg. Combine the two mixtures until blended and spread in the prepared pan. Bake for 20 to 25 minutes, until lightly browned.
Blackened Catfish
Ingredients
4-6 catfish fillets 1/3 cup of melted butter 2 tablespoons of lemon juice 1 tablespoon of dried thyme 1 teaspoon of salt 1 teaspoon of garlic powder 1 teaspoon of cracked black pepper 1 teaspoon of paprika 1/2 teaspoon of crushed red pepper flakes and 1/3 cup of dry white wine.
1. First u might want to open the windows cuz its gonna smoke some :) heat ur skillet over med-high heat for about 10 min or till its good and hot.
2. While ur skillets heating rinse the fillets and pat them dry the mix the melted butter and lemon juice in a small bowl in another bowl mix the thyme salt pepper paprika and red pepper flakes.
3. Brush the fillets on both sides with the butter and lemon mixture then season them evenly with the seasoning mix and put the fillets skin side up into the skillet and cook on both sides until the meat flakes off easy with a fork, about 6 min.
4. Pour the wine and the rest of the butter over the fillets and serve.
Catfish Pie
Ingredients
1 1/2- 2 pounds skinned catfish fillets 1/2 pint of cider with parsley and thyme in it salt fresh ground black pepper about 1/4 cup of white sauce (make before u start on pie) 1 pound of diced potatoes 2 cloves of crushed garlic 2 leeks chopped fine 1 1/3 cup of mushrooms (slice thin) 1/2 cup of chopped red bell pepper 1/2 cup of chopped celery 1/2 teaspoon of tabasco some Cajun seasoning, enough pie crust dough to cover the bottom of pie pan and top of pie and 1 beaten egg to glaze the crust.
1. Cook the catfish in the cider with the herbs and leeks for ten minutes (season to taste while cooking) and save the liquid.
2. Take the catfish out of the pain and flake it and take out the bones.
3. Cook the potatoes in the fish liquid until they get tender drain them and set them aside.
4. Add all the liquid to the white sauce and stir in the garlic.

Crawfish Cornbread
Ingredients
1 cup of white cornmeal 1/2 tsp soda 1 tsp salt 1/2 cup cooking oil 1 can of cream style corn 2 eggs 1/2 pound of grated cheddar 3 chopped jalapenos 1 cup of chopped onions and 1 pound of chopped crawfish.
Mix all the ingredients in a big bowl. When everything is mixed good pour the batter into a lightly greased 8x10 baking pan and bake for 45 min at 350.
Cream of Jalapeno Soup
Someone on twitter was talkin about this soup never heard of it but sounded so good i made up my own recipe, turn out good, Tom loved it!
Ingredients
3 tablespoons of butter 3 tablespoons of flour 3 cups of chicken stock 2 cups of heavy cream 2 tablespoons of butter 1 large onion (minced) 1 diced carrot i green bell pepper (sseds out and chopped) 3 or 4 jalapeno peppers (i roasted them first on a cookie sheet) 1 cup of grated cheddar and 1 cup of grated pepper jack cheese
1. Melt the 3 tablespoons of butter in a heavy pan on low heat then add the flour and stir for about 3 min then mix in the stock and cream.
2. Bring it to a boil (keep stirring) then down to a simmer til it gets thick, about 10 min.
3. Melt the other 2 tablespoons of butter in a skillet over low heat then add the onions carrots and bell pepper and cook til soft.
4. Add the cheeses to the cream mixture and stir until they melt then add the jalapenos and let it set on low heat for about 5 min ... (more)
Nanner Puddin'!
This is the easy recipe i'll put the stovetop one in next time!
Ingredients
1 8 ounce package of cream cheese 1 14 ounce can of sweetened condensed milk 1 5 ounce package of instant vanilla pudding mix 3 cups of cold milk 1 teaspoon of vanilla extract 1 8 ounce container of whip topping 4 sliced bananas and about a half package (or more) of Nilla wafers
1. In a big bowl beat the cream cheese until its fluffy then beat in the condensed milk pudding mix cold milk and vanilla till its smooth. Fold in half of the whip topping.
2. Line the bottom of a 9x13 dish with Nilla wafers then arrange the banana slices over the wafers as evenly as you can. Spread the pudding mix over this then top with whip topping and chill at least 4 hours.
